Apple Walnut Bread

We're still trying to use up apples from apple-picking 3 weeks ago (only a few left, thankfully). Lots of people have asked for my recipe for the apple walnut bread I've been foisting on everyone. For those who are allergic to nuts, it works almost as well without them.

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup chopped walnuts

Moist Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 1/2 teaspoon vanilla
  • 2 cups apples - peeled, cored, and shredded

Directions

  1. Preheat oven to 350 degrees F. Grease one 9x5 inch loaf pan.
  2. Mix together flour, baking powder, soda, salt, cinnamon, nutmeg, and walnuts.
  3. In a large bowl, beat butter, sugar and 1 egg until smooth. Beat in second egg, and stir in vanilla. Stir in shredded apples.
  4. Pour flour mixture into batter; stir until just moistened. Spread into prepared pan.
  5. Bake for 45 minutes, or until an inserted toothpick comes out clean. Let stand 10 minutes, then remove from pan and place on a rack to cool.
